What I would do is place the head on the block, without any gasket and see if the valves hit! If they do then I would locally relieve around that area and fit the gasket. If they hit with the gasket fitted then the problem is slightly bigger, but more relieving may help. Don't go too far or you may find a weak spot. The best way of really finding out is to measure the chamber size. Ideally this is done with a burette, flat glass and oil, but I find a kitchen measuring jug and water works as well. Ignore the miniscus and look for about 30-33cc. I can measure my unmodified Mk1 head if you like and compare with a heavily planed version too.
